I am taking a page out of my nieces blogs.. recipes I have tweaked, it was wonderful!
pkg of multi-grain pasta with 10-17 grams of protein
1 sweet potato
1 zuchini
2 carrots
1 lg can of artichokes
1 bottle prepared Pesto Sauce, add 1-2tbsp of olive oil
cut sweet potato and zuchini into bite size pieces, drizzle with oil, salt & pepper, cook on broil, flip half way thru, let them brown a bit
cut carrots and artichokes, saute with garlic to desired firmness
cook pasta, warm up pesto
throw in a large bowl and mix, eat warm with garlic bread or crescent rolls!
